The place – Three Blue Ducks is a local place – just up the road from the beach. The Three Blue Ducks team pride themselves on using produce from their own garden that’s out the back as well as sustainable seafood and sustainable, mostly organic meat.
The food – select from a four course menu – you choose four dishes from each course or go for the 4 or 5 course degustation chosen by the chef. Degustation is usually the preserve of restaurants like Marque or Momofuku but increasingly chefs who really understand food are delivering in a less formal way.
We’re fans of degustation from great chefs so there was really no choice. The wine – a modern Sydney list – less well known Australian and NZ wines with some globals – mostly French. The beers – a broad selection of local boutique offerings.
The first course – slivers of paper thin, crisp chicken skin and chicken parfait was light as air and had a pure intense chicken flavour – just a sample of what was to come. Next – black cake, fried duck egg, perfect tiny cubes of apple and beets – this dish had everything. The black cake had the earthiness of a black pudding with a smell of hot melted bitter chocolate, which was delivered by sweetness of the beets alongside the crunchiness and sharpness of the apple. This was a real pleasure for the senses. Followed by duck, rhubarb and licorice – duck breast that was moist and pink – the rhubarb was perfect against the rich of the duck with radichio and finely cut battens of celery. The desert – apple, praline, rosemary and honey. Honey icecream infused with the intensity of rosemary, apple with dulce de leche against the crunchy sweetness of the praline.
The verdict – This is skilled craftmanship underpinned by experience and a clever understanding of food – that’s what Three Blue Ducks delivers. Three Blue Ducks deliver a cool Sydney dining that is up there with the best.
